At The Open Door, we are listening to our clients concerns. “Through our Community Conversations on Hunger last fall, people identified a need to learn about healthier cooking skills and ingredients,” says Casey Silver, TOD Food Access & Equity Manager. In response to that feedback we have partnered with The U of M Extension program, Cooking Matters, to offer a free 6-series, healthy cooking class for clients at Mount Calvary Church in Eagan. Funding for this program has been provided by The Center for Prevention at Blue Cross and Blue Shield of Minnesota.
This week participants learned to prepare a mixed-vegetable frittata and healthy pumpkin muffins. Each week participants also receive the groceries to replicate the recipes at home with their families.
